Great served on warm bread, as a welcoming breakfast for
friends and guests; as an unusual dip; to caramelise meat or as an interesting
cheese accompaniment, or to blend a sharp-flavoured food with a distinctive
wine. Also as a fanciful sorbet or a colourful girandola, as a tantalising
after-dinner sweet. The jams can be diluted with water or broth to make a terrific sauce. It can be re-cooked. To caramelise a joint of meat, giving it a glossy rather than crispy finish, brush on a little jam just a few minutes before it has finished cooking.
